2007 Red

The bright red fruit flavors of our RED blend work with similarly juicy and brightly flavored dishes and ingredients. Some of our customers' favorite pairings come hot out of the wood fired oven: simple rustic pizzas and roasted produce filled with seasonal flavors and natural richness.

Simple pairing: What doesn't go with a great glass of wine? From fruity cheeses through to rich charcuterie with great rustic bread and homemade preserves - they all work well. Our recommendation is to break bread with this wine. Grab some simple picnic ingredients and enjoy or get a little more involved and craft a simple seasonal ratatouille or roast a great tasting chicken.

Recipes: More elaborate pairings include dishes like our classic tomato and arugula pizza as featured in FOOD&WINE magazine. For the best tomato sauce, however, look no further than oven-roasting tomatoes to accentuate that sweet caramelized flavor that makes wood fired pizza so good. There's a great version in Bon Appetit but feel free to tweak it by pre-cooking some of the tomatoes in a low oven for several hours with olive oil, salt, pepper and garlic to bring out that sweetness. Seasonal Sonoma Pairing: Sonoma County has an embarrassment of riches when it comes to produce. At almost any time of the year we are able to source, grow or pick a wide variety of delicious locally grown ingredients. One of our favorite pairings with the RED is a simple seasonal pasta dish. Be it a braised pork ragu or a simple pomodoro - they all seem to work like magic with our RED blend. The fresher the ingredients the better - all that natural sweetness works so well with the juicy red fruit flavors.
